Food for the Soul.

Doesn't everyone have a favorite fall/winter meal? One that's warm and makes you feel perfectly full and you could just curl up on the couch with a good movie and a bowl or plate of it? I know I do :) My friend, Summer, is from Louisiana and introduced me to corn & crawfish chowder and I've been in love with it ever since! I decided to share the recipe with you today :)

First, I'm sure you're all "where the hell can I get crawfish?" Most Super Walmarts have it actually! It's in the frozen seafood section and looks like this:


You just need one bag per batch. Obviously more if you double or triple recipes.


The Recipe:
1 bunch green onions, chopped
1 stick butter
8 oz. softened cream cheese
1 lb. Crawfish tails
2 cans Niblet corn with juice
2 cans cream of potato soup
1 pint of half & half

Sauté onions in butter. Add cream cheese, corn, potato soup, and crawfish (make sure the cheese 
doesn't stick to the bottom). Add cream and stir. Heat until crawfish are warm.

**Very important: Do NOT drain crawfish. The juice is very important in flavoring your chowder!



In other news, I rearranged the living room :) and I've gotta say I LOVE throw pillows. The room is so open now and I finally got a little basket to put Noahs toys in so they aren't scattered everywhere.

Exciting News!!

It's just been one stinkin exciting week! First off, we got a new vehicle! We traded in my Jeep (that we just got in July) for a MINI VAN! Heck yeah! Here's a picture of my new swaggin wagon


And here's the reason we got the mini van!

Doggy number 2! He wouldn't stay still very long, sorry for the blurry picture!

Basically, we've been talking about a mini van anyway, just so that's one less stress when we do get pregnant again (down the road) and we just went to go look on Thursday morning...and like 837298361 hours later, we came home with a mini van! It's a 2010 Dodge Caravan...only 30some thousand miles. We're loving it! 

Now here's the short story about the new pup. His name is Sammy, btw. The other day we were noticing that Sadie (pup #1) has been super depressed since she's been here. She used to always have other dogs to play with when we lived back in Michigan, so we decided to start looking for a friend for her. Adoption only of course. So I looked at www.lycomingspca.com and found him :) I fell in love almost immediately! We went in and filled out an adoption survey and we were approved and then we took him out to play! He came right up to Noah and licked his hand, so 

We're going back to Michigan for Christmas...and we're driving since it's only 8-9 hours. But we didn't have a vehicle that would fit our luggage, ourselves, and the dogs. This is just such a perfect solution! It did take a lot of convincing and pride swallowing to get myself to drive a mini van, but I am SO glad I did it now.
